LAS VEGAS (Jan. 18, 2023) – Following the opening of the latest location of the acclaimed Lotus of Siam, Bua Food Group will launch its newest concepts, Naxos Taverna and Kallisto Oyster Bar at Naxos, at Red Rock Casino Resort & Spa on Saturday, Feb. 18. Reservations are available at naxosredrock.com beginning Jan. 19.
Naxos Taverna is a story of exemplary culinary experience, purity of flavors, and gracious hospitality that captures the spirit of its namesake, Naxos. An island in the southeast of Greece in the Aegean Sea, Naxos was announced in ancient times as the isle of Dionysus, the god of wine and celebration.
Managing Partner and Director of Culinary Operations Chef Mark Andelbradt’s menu features elevated contemporary Greek seafood-focused cuisine. With an open view into the kitchen, guests will experience the preparation of assorted fresh-baked bread made onsite daily, accompanied by a bespoke single-origin olive oil. The new spot will feature artfully prepared whole fish, including Lavraki and Skorpina, kataifi-wrapped prawns, and traditional meze. The equally impressive cocktail menu features specialty cocktails highlighting traditional Greek spirits like tsipouro, retsina ouzo, and mastitha, and a hearty offering of Greek beers and house sangria.
Boasting one of the city’s largest and freshest seafood menus, Kallisto Oyster Bar at Naxos showcases more than 25 types of fish and several varieties of oysters, along with other seafood specialties, including a delicious pan roast, at an intimate 13-seat bar. An award-winning wine list complements the menu, bringing the Summerlin area a dining experience unlike any other.
Naxos Taverna and Kallisto Oyster Bar at Naxos will transport guests to the coast of Greece with a light and airy European continental design. The contrast of wood, stone, and earth tones complement each other while adding dimension and texture to the beautiful space.

Naxos Taverna will be open Sunday through Thursday from 4-10 p.m. and Friday, and Saturday from 4-11 p.m. Kallisto Oyster Bar at Naxos will be open Sunday through Thursday from 11 a.m. to 11 p.m. and Friday and Saturday from 11 a.m. to 1 a.m.
